A blessed mess

What day are we on!?! 🤣
My creative time happened in the kitchen when I was meal prepping and decided to go off plan to use up what I had in the fridge. I Sautéed some chicken sausage, then leeks from a recipe that I didn’t make last week, a small potato from the back of the shelf, handful of spinach that was the end of bag, whisked eggs, almond milk, salt pepper, garlic, put in all into a baking pan and topped it with Parmesan cheese then baked.
Leek and sausage egg bake for my breakfast this week. I’ll let you know how it tastes tomorrow :)
